Grass-fed beef vs feedlot beef

Grass-fed beef is often presented as the ethical and ecological answer to industrial cattle. The welfare case is real. The climate case is more complicated than either side usually admits, because grass-fed cattle live longer and emit methane for more of their lives while using considerably more land.

Side by side

Grass-fed beef compared with Feedlot beef
CriterionGrass-fed beefFeedlot beef
WelfarePasture access, natural grazing behaviour, generally lower disease pressure.Dense feedlot confinement, grain-driven acidosis risk, routine antibiotic exposure.
Land useSubstantially more land per kilo of beef.Less pasture, but a large indirect feed-crop footprint.
MethaneHigher lifetime methane because animals reach slaughter weight more slowly.Lower per-kilo methane, higher feed-related emissions and manure-lagoon impacts.
Soil carbonWell-managed grazing can build soil carbon, but sequestration is finite, reversible and far smaller than herd emissions. No meaningful sequestration claim.
SlaughterIdentical process and identical endpoint.Identical.

Questions people ask

Is regenerative grazing carbon negative?
Field studies find soil-carbon gains under good management, but they saturate after a couple of decades, reverse if management changes, and in almost all assessments fall short of offsetting the herd's own methane.
Which beef should I buy if I still eat beef?
Pasture systems clearly win on welfare. If climate is your priority, reducing total beef intake moves the number far more than switching between production systems.
